Em um país onde 21 milhões de pessoas em insegurança alimentar grave, o combate contra o desperdício de alimentos deve começar desde o início da produção, no campo.
Segundo o movimento da sociedade civil “Pacto contra a Fome”, pouco mais da metade do desperdício está no começo da cadeia dos alimentos, que engloba a produção, colheita e transporte.
As frutas e as hortaliças são as mais desperdiçadas, depois vêm os tubérculos e os laticínios.

Mas, nessas etapas de produção, já existem boas práticas para evitar que a comida boa vá para o lixo.
Em Mogi das Cruzes (SP), por exemplo, a agricultora Simone Silloti criou o projeto #FaçaumBemINCRÍVEL pela necessidade que a pandemia do coronavírus trouxe em 2020.
Como os agricultores da região não tinham para quem vender, Simone convenceu todos a doarem as hortaliças excedentes, prática que hoje é subsidiada por empresas privadas que participam do projeto.
O projeto já doou mais de 380 toneladas de alimento e ajudou 300 mil famílias em 17 municípios de São Paulo.
Cuidado na colheita
Em Paranoá (DF), o casal formado por Clevane e Joe Valle criou uma série de cuidados simples, mas que fazem a diferença na colheita e pós-colheita.
Agora, evitam que muitos funcionários toquem nas alfaces e a embalagem começou a ser feita dentro do campo, para não estragar as folhagens no transporte. Também nunca deixam as hortaliças no sol.
Para hortaliças descartadas por não estarem no padrão, apostaram no beneficiamento para conseguir vender esses alimentos.
Com essas medidas, a fazenda conseguiu reduzir pela metade o desperdício.

Transporte
O Globo Rural também mostra táticas para combater o desperdício no transporte do alimento. Na Companhia de Entrepostos e Armazéns Gerais de São Paulo (Ceagesp), existe um projeto para padronizar as caixas de frutas, verduras e legumes.
Além disso, os produtos que perdem valor comercial dentro da Ceagesp são enviados para o banco de alimentos para doação.
